kwormann - you mentioned this in an earlier post. Is this something you made up or is there a formal recipe? Sounds intriguing!

Well, like most things I make, I swipe from a recipe, and then make it up as I go.
I baked a sweet potato until done (hows that for exact). I slice longways, scoop out most of the filling and put it in a bowl. I mix light cream cheese, salt, pepper, cumin and chopped jalapenos with the potato and put it back in the potato. I bake for a few more minutes then serve with hot black beans over the top (they were leftovers, from dried beans in the crockpot, but canned would work too.) Yesterday when I made it again, I refried the beans then added it to the potato mixture before stuffing.
This idea came from a post about Moosewood Cookbooks and I think the original recipe was Indian Savory Sweet Potatoes, but it didnt have beans. I am obsessed with southwestern foods, so I changed it to a SW recipe http://www.cookinglight.com/bbs/smile.gif
They are my favorite food right now. One half is a great lunch!
