Does anyone know if when you make a cake with cream cheese frosting if you must keep it in the fridge? I wanted to make the carrot cake in the J/F issue, but I hate cold cake. I recently made banana cupcakes with similar frosting, but i kept them in the fridge after I made them b/c I didn't want them to go bad.

When I was a kid, we didn't refridgerate cakes, regardless of the frostings. My parents still do not. It has not effected them but I will be interested in others' comments.

I made a banana cake several years ago with cream cheese frosting. The recipe didn't say how to store it. I left it out covered in my cake keeper. After about 3 days, I went to cut a piece for my Dad and the frosting had some green moldy spots on it. The cake itself when cut into had "fuzz" on it!!!! Ever since then, I refrigerate anything that has creamcheese!!!!!

I also wonder about this. The other day I made a cake and made a butter frosting. I kept it out on the counter, but it also didn't last very long so I didn't worry. If I were going to have that cake for more than 2 or 3 days should it be refrigerated? My husband said he thought the large amount of sugar in the frosting might help it not to spoil, but I don't know what his scientific theory behind that was! Anyone know?

I agree with GayeC...I am a hige advocate of safe food storage and I would never leave food like that out...just take it out for 1 hour or so to come to room temp...

well, there are only two of us--so i freeze everything==cakes --cookies ectect==then just take it out -cut two pieces micro wave 15 -20 seconds & it's perfectly fresh & warm & at it's best.

I've always been under the impression that you should refrigerate anything that has any sort of dairy-based frosting or filling; i.e., you could leave out a cake with seven minute frosting, but I would never leave a cake out that had cream cheese frosting on it.

I always keep cakes with cream cheese frosting in the fridge, and try to remember to bring them out and hour or so before serving. It is a pain but has always seemed to me to be the safest way to go.
