I've taken mine, mixed with brown sugar, cinnamon & nutmeg, then dolloped a spoonful onto a piece of puff pastry. Fold it over & crimp the sides. Heat according to pastry directions. Sprinkle with powdered sugar. They make nice little tarts.

Does any one have a recipe so I can use these up? Something easy and good. I remember something about a sorbet recipe. Thanks in advance for posting.

There's a very easy "crockpot fruit soup" recipe that my sister-in-law makes. It makes a lovely winter side dish, and is even great with icecream!
It's also easier than easy:
Put the following in your crockpot:
1 can apricots
1 can cherry pie filling
1 can chunk pineapple
1 can peaches
1 or 2 small cans mandarin oranges
Mix in the following:
1-2 T cinnamon
3/4 cup sugar
Cook on low for 4 hours.

If you take the canned fruit and drain plus dry with paper towel you could use it in cakes, breads, muffins. When making a coffee cake you can mix fresh fruit with canned fruit it yields a very moist result. Here is a recipe I found which I have not tried yet.
Apricot Spice Cake
Cake
2 C flour
1 C sugar
1 1/2 t cinnamon
1/4 t allspice
1/4 t ground cloves
1/2 t salt
1 heaping teaspoon corn starch
3 t cocoa
2 C canned apricots, drained and chopped
1 C raisins or chopped dates
1 egg
1 C chopped nuts
1/2 C melted shortening
Frosting
12 oz. semi-sweet chocolate
1C sour cream
1/4 t salt
1 t vanilla
Preheat oven to 350¼ F.
Cake: Sift together the first 8 ingredients. Add the rest of the ingredients and blend with a mixer. Pour into a greased and floured 9" x 13" pan. Bake for 50-60 minutes.
Frosting: Melt the chocolate in a double boiler over simmering water. Remove from the water and add the remaining ingredients, blending thoroughly. When the cake is cool, frost.

How about a cobbler? I just put the fruit in a greased baking dish (if there is a lot of syrup you might want to drain some) and put biscuit dough on top. Sprinkle with a bit of sugar and bake at 400 until biscuits are done through. Serve plain or with frozen yogurt or ice cream. One of my DH's favorite desserts.
