I have some of the little frozen roll rounds in my freezer and want to use them to make Calzone. My question is that I'm sure I need more than one roll per calzone, so when do I combine them, when do I let the dough rise, etc? Anyone do this? Help!!

I used to make calzones al the time with frozen roll dough --it was whole wheat, but I think it was called "Texas size" which suggests bigger than usual. After you thaw but before rolling it out, you could try combining 1 1/2 rolls -- sort of like scarps from rolled cookies. You could also just use one roll for the bottom and one for the top, and seal the edges all around. Good luck.

Do you stuff them and then let them rise? If so, how?

I've done this before with frozen bread dough. No need to let the dough rise, just thaw, fill and bake. The dough takes on a pizza crust-esque texture, and works wonderfully! http://www.cookinglight.com/bbs/smile.gif

I thaw the bread dough, and then roll it out a little to get a good circle for the filling, then fold it over the filling, sprinkle with water on the edge and seal it up tight. They freeze really well(after cooking) for quickie lunches or dinners.
