View Full Version : April's Pasta Primavera
Just had it for dinner and it was great! Nice and easy to make (I had a 4 year old and a 16 month old running around the kitchen while I prepared it.) DH gives it a 9 out of 10, so that is pretty good for us. One to add to our recipe files.

We had this Sunday night. I subbed green beans for asparagus, as the asparagus at the store was not very fresh, and veggie broth for the chicken broth. DH and I agreed that it was good, but there is another CL pasta primavera recipe that we like better.
The serving size was quite satisfying and the flavors were nice and fresh. It was easy to make- I liked that the asparagus (green beans in my case) and peas were cooked right in with the pasta. The crushed red pepper was fairly prominent- for once, I might actually cut back on the amount listed (usually I up the seasonings in CL recipes) as that isn't the flavor I think of when I think "pasta primavera". It was not as good reheated- spending the night in the fridge resulted in the pasta absorbing a lot of the sauce, so the dish was a bit dry the second time around.

We tried this recipe a few nights ago and also really enjoyed it! My only substitution was half & half for the whipping cream. I definitely felt the crushed red pepper was fairly prominent, which I liked, but I could see where this might be too spicy for some people. I've never had spicy pasta primavera before, but that's exactly what this is. Nevertheless, it was tasty and very easy to make. Worthy of a repeat. :)

We tried this last night. It was very good, a spicy pasta primavera. I also subbed ff half & half for the whipping cream, because that's what I had in my refrigerator. The sauce was a little thin, maybe because of the substitution. All in all a good recipe featuring fresh veggies.

We had this for dinner tonight, (minus the red pepper flakes), and thought it was great!! A wonderful showcase for fresh spring vegetables!:)

I agree, what a delightful spring meal! For once, I was careful about not overcooking the veggies  so everything was nice and crisp. I too subbed half and half instead of the whipping cream, but I thought the sauce had just the right creaminess.
