View Full Version : What do I do with half a container of ricotta?

Hi,
I made the broccoli with smashed potato casserole last night and it was wonderful! Comfort food at its best!
Since the recipe calls for 1/2 cup of ricotta (I bought the small size), I have about a cup left. What can I do with it?

Hi Wendy- I think someone posted this exact same question not too long ago. There were some good ideas on that thread, if you do a search. Unfortunately, I can't remember when this way. I'm going to take a look-I'm no good at posting the links here, but I'll see if I can find a date and topic, at the very least.
Okay, I found 2 threads- one from 12-27-00 and one from 08-08-00.

I like ricotta on toast (whole wheat) with jam. I eat it as a breakfast sandwich sometimes.
