ISO: Cupcake Filling Recipes

I'm looking for some good recipes for cupcake filling. I'd really like to do lemon cake with a raspberry or strawberry filling, but I'm open to all suggestions. I'm also thinking about making a sheet cake, instead of the cupcakes, and then marking it off in squares and filling each square with filling. Any help out there?

I always just use a jam that I like - like "Whole Fruit" types. And I just bake them with the filling in the middle rather than trying to inject anything after baking. Just fill the cupcake liners 1/2 way, put a tsp or so of filling in the middle, and cover with more batter.
