View Full Version : Freezing Chipotle Peppers in Adobo Sauce

I've got a can of partially used chipotle peppers. Is it okay to freeze these? I don't want to have to throw the can away as they are hard to find in Hawaii. I was thinking maybe I could puree the whole can and put individual portions in ice cube trays? If anyone has any ideas out there they would be most welcome.

I freeze mine all the time, exactly the way you mentioned, except that I never puree mine first, but only because it never occurred to me.

BW - just posted about Chipotle Chilies - live in Toronto and had a time finding these little gems - I have to tell you - I think they are so 'hot' and well preserved in the adobo sauce that they were perfect just in the fridge in a sealed contained for well over a month. I think they have a very long shelf life (even after opening - mine did) In any event, I have just used them again in the past week and they were perfect and we are not dead. http://www.cookinglight.com/bbs/wink.gif

I just read in a cookbook that the best way to keep your leftover chipotles in adobo sauce is to puree them. The author (Ming Tsai) did not mention that you needed to freeze them. I think they will keep a long time just in the fridge.

I too have frozen the peppers without any trouble. I freeze everything as I hate to waste anything.

Well, you guys would probably never want to eat at my house after I admit this, but...
I've used chiles in adobo sauce that I've stored in the fridge for months. They've been as good as if I just opened the can. To me, they're just like other condiments that sit around in my fridge for long periods of time. If I froze them, I probably wouldn't use them unless I cut them up or pureed them and froze them in individual portions. The way I do it now, I just scoop out what I need. BTW--I don't store them in the can--I put them in a glass container.

I too am interested in freezing my left-over chipotle's in adobo sauce. Please tell me though, if I puree these peppers in the adobo sauce & then freeze them in ice cube trays, how do I accurately measure out the needed amount when a recipe calls for 1 chipotle or 2 chipotels etc???????

I froze them individually on a plate with a little adobo sauce on each one, then after they were frozen, I put them all into a ziplock freezer bag. I pull out the required chipotles as needed, and they're wonderful. I wouldn't bother with the mess and hassle of pureeing first. Just my 2 pennies

Lots of great responses here. I think I will try and freeze them individually on a cookie sheet with a little sauce on each one and then when frozen transfer to a smaller container.
When I fly home to my mom's in April (Washington State) I'll be stocking up. They don't carry these little gems in the military commissaries here.
