I have used ground chipotles from Penzey's for many years and finally got around to trying the canned chipotles in adobo sauce. IMO you can substitute the ground chipotles with no loss of flavor and no worry about having to freeze or fridge the unused portion. You get the same wonderfully smokey flavor with the ground spice - just season to taste.

Thanks for the tip. It was proven difficult (altho' finally I did) find chipotles in adobe sauce on my side of town.
In the past, I have used Pensey's dried whole chipolte's but didn't have anything to compare the flavor with.

What's the equivalent measurement?

Sorry, I can't give you equivalents - just add it to taste, bearing in mind that it IS hot, but not nearly as hot as cayenne.
