This is my first time at this site. What a gastronomically informed group! How about some help? I am looking for a recipe for carribean stew with sweet potatoes, black beans, green peppers, onions, and those great spices. I have found soup recipes but I want a stew recipe maybe with some chicken added? I have enjoyed reading your posts and now just want to get into the kitchen!

Welcome Patrice! I found this on the FoodTV site. I suppose you could add sweet potatoes for the purple potato and incorporate black beans in the stew as well. Not exactly what you were looking for but I thought it would be a start.

CARIBBEAN STYLE VEGETABLE STEW
Recipe courtesy Chris Siversen, Executive Chef, Bridgewaters
1 large purple potato cooked until tender, then cubed
1/4 cup vegetable oil
1 red onion, chopped
3 cloves garlic, chopped fine
3 tablespoons fresh chopped ginger
2 tablespoons red curry paste or substitute a high quality curry powder
1 small habanero pepper (optional)
2 bay leaves
3/4 cup diced red pepper
3/4 cup diced yellow pepper
3/4 cup diced zucchini
3/4 cup diced yellow squash
1 cup diced fresh pineapple
1 cup coconut milk
2 tablespoons chopped fresh cilantro
Salt and pepper

In a saucepot, heat oil over medium-high heat. Add red onion, garlic and ginger, stirring continuously so as not to burn. After 2 minutes add the curry paste, habanero and bay leaves until well incorporated. Add peppers and stir again cooking for 2 minutes. Add zucchini and squash and cook for another 2 minutes. The mixture should be well coated at this point. If it starts to burn, lower the heat and add a little water to stop the burning on the bottom of the pan. Add the coconut milk and cilantro. Salt and pepper to taste. Lower the heat and simmer, covered, for at least a 1/2 hour, stirring occasionally.

During the cooking process you can adjust the balance of moisture by adding water or coconut milk so the consistency stays stew like. Adjust the salt and pepper to taste.

Serve over rice.

Hi. In the Caribbean besides sweet potatoes we use all kind of root vegetables like taro ņame, yautia, potatoes, green plantains, chayote etc & calabaza (pumpkin). There is a famous stew sancocho which is very popular in the Dominican Republic and Puerto Rico. I will give you the recipe.
You can adapt the recipe pretty much to your liking and what ingredients you have
Sancocho
3 qt water
1 tab salt
1 onion
2 tomatoes
1 green pepper seeded
1 sweet chili pepper seeded(aji dulce- its a sweet pepper not to be confused with hot pepper)
3 fresh culantro leaves )if not available use some cilantro
2 fresh corns halved
** coarsely chop onion through cilantro
----
1 pound lean beef
1/2 pound lean pork meat with bone
-----
1/2 pound white yautia (taro root or tanier)
1/2 pound yellow yautia (yellow taro root or tanier)
1/2 pumpkin or squash (you could use butternut squash)
1/2 pound potatoes
1/2 pound ņame (root yam)irregular shaped starchy tuberous roots of a tropical plant.
1-2 pound sweet potatoes
**all above peeled and diced)

1 large green plantain
1 large ripe plantain(when the plantain is ripe is called amarillo refering to the yelow-brown skin)
**the above peeled and quartered

1 tab salt
1/2 c tomato sauce

In large 12 qt kettle combine ing water through corn Bring rapidly to a boil.
Clean & wash meats. Cut into cubes. Add meat and bones to kettle. COver, reduce heat to moderate and cook 1 hr.
WAsh vegetables yautia through sweet potatoes and add to kettle.
Rinse green plantain rapidly in salted water. Drain and add to kettle along with ripe plantain
Add salt and tomato sauce, bring rapidly to a boil, cover and cook on mod heat 40 mins.
Uncover remove pieces of green plantain, mash , turn into balls and add to kettle. Boil rapidly 1 minute. Serve. You can serve this with a side bowl of white rice.
**note you can also add other types of meat or chicken to this as well as other vegetables you could add even pasta if you want. This is a basic recipe and you can adapt it.

The more recipes the more ideas! Actually, I tried a Weight Watcher "bowl" of Carribean Stew and it was pretty tasty. I am working off of those flavors.

Caribbean Vegetable Stew
Cook meat can be added or fish
Serves 4
2 tab butter
1 onion chopped
1 garlic clove crushed
2 carrots sliced
6 1/4 c veg stock or canned broth (add more stock for a thinner soup)
2 bay leaves
2 thyme sprigs
1 celery stalk finely chopped
2 green bananas peeled and cut into 4 (or use plantains more accesible)
6 ounces white yam or taro peeled and cubed (use other root veg if not available)
2 tab red lentil
1 chayote peeled and chopped
2 tab macaroni
salt pepper
chopped scallions to garnish
Melt butter and saute onion, garlic, carrots a few mins. Add stock, bay leaves & thyme and bring to a boil. Add celery, plantains, yam, lentil, chayote, macaroni (if using it). Season soup and simmer 25 mins until vegs are cooked. Garnish with scallions when served
