View Full Version : choclate mint cheesecake
I was thinking about making for a church group that comes to an end of the month. I was wondering if anyone has made it. I am thinking that many would be shocked about a cheesecake being light. Ps somebody had a thread about the cranberry hazlenut coffee cake. I was wondering if you could replace the cranberries for rasberries. Cranberries are too tart for me. thnx Matt

I haven't made the cheesecake, but for sure I think you could substitute raspberries for the cranberries in the coffeecake! What a great idea! I have raspberry bushes in my backyard, and come late spring and early fall, I have an abundance of them. Now that you've given me the idea, I will definitely try this cake with them too!. But I won't chop them up like the recipe says to do with the cranberries - I'd just leave 'em whole and dump 'em in! Good luck, and if you try it, let me know how you like it!! Thanks again for the great idea.....this board is so great for the non-creative types like me!

I made the chocolate mint cheesecake for some people at work and they loved it. They didn't even know it was lite until I told them.

Hey Matt, I actually did substitue 1/2 of the cranberries for raspberries in this coffeecake. I made it for Christmas morning and it was delicious...good luck!
