I would like to try this, but I cannot find "fat free not sugar free" instant pudding anywhere. Do any of you have it in your area? Has anyone used fat free, sugar free pudding as a substitution?

You've got to make it--I thought it was absolutely wonderful (and much better the next day when the crackers get soft!)
When I was shopping for ingredients, I was at Wild Oats and they only carried naturally flavored vanilla pudding without gelatin and it was naturally fat free but not instant. I mixed with the milk and cream cheese and then brought it to a boil and let cool. It was great. I also used whole wheat graham crackers because that was all they had. It really turned out yummy.
My point in all this is that the recipe is flexible and I'm sure whatever type of pudding you can find at the store will be fine. OK--I know that didn't really answer your question exactly but... http://www.cookinglight.com/bbs/wink.gif

I've made this several times and substituted regular instant vanilla pudding. It's a great dessert! I usually don't like FF cream cheese, but don't mind it in this particular recipe. (The first time I used 1/3 LF and there's no real difference in taste between the two that I can tell).
One note though, it makes ALOT, unless you need it for a crowd I would definately only make half.
BethH is right, it's much better the next day. All the flavors seem to just blend.

i love this too--especially since you can make it with one arm tied behind your back. but am wondering can you freeze it?

Once again all you guys have piqued my interest in something that I really hadn't paid much attention to before!
I will definitely try this one now!

Joyce fatfree not sugarfree just means regular old Jello pudding. Check the box it really is fat free. And this dessert is really yummy too!!

Bossy, I was ready to kick myself when I read your reply...here I am running around looking for something with a big "fat free" sign on it, never thinking to look at the fat content on the regular Jello box...boy, have I learned a lesson!

I made this dessert and it was terrific. However, it didn't look as elegant as the picture. I would use more of the pudding mixture to put on top and break the crackers into smaller pieces. Of course after everyone starts digging in- it doesn't matter.
