I'm trying to incorporate more soy into my diet, and tofu (obviously) is one way to do it. BUT I do have a question regarding the storage of tofu.
If you don't use the whole package when you first open it, how long will it last and what is the best way to store it? In the same water it came in? Waterless?
Also, can it be frozen?

With daily water changes (a must!), a week is recommended. Don't know about freezing as I buy it so cheaply it's not worth the freezer space.

If the tofu comes packed in liquid, I store it in water and change it every day or so. If it is the flavored baked kind that comes shrink-wrapped, I store it in a ziplock bag or tupperware container. Either kind starts to taste sour and "off" after about a week.
As for freezing- you can freeze tofu, but freezing changes the texture a bit in a way that I don't really care for. However, other people deliberately freeze tofu because they like the resulting texture, so give it a try and see what you think. :)

This is why I don't buy more tofu. :( I do freeze the leftovers, but I'm not crazy about the resulting texture, personally. Try tempeh, which is a bit easier to store, or just going to the source and try edamame - yum!
