This wasn't a wow dish but it was pretty good and easy to prepare and make. I served it with sour cream and some taco chips and DH also added some spicy rice mix with his. It had a mexican feel to it and although I think the chicken itself could do with some spices, overall it works as a quick weeknight dinner.

I have this on the menu for Thursday, when I need to make dinner in a hurry. Sounds like it will work--thanks for the review.

I would echo linseyd's review. The chicken could use some cumin or something, but overall this dish is tasty and my DH was impressed with the presentation. I used FF yogurt instead of sour cream, which worked fine, and I served it with roasted carrots because, well, I had some carrots. It made a nice supper at the end of a hectic day.

I took your advice and added a bit of Northwoods and cumin to my chicken before cooking. I thought the flavors were really good - sweet from the peppers, smokey from the chipotles. YUM! My pepper stir-fry was almost all onions, though. GRRRRR!!! I was only making 1/2 the recipe, though, so I picked out most of the onions for a later use and went with mostly peppers in the dish. That worked out well.
I served the chicken with cilantro lime rice and green beans (didn't really go, but had to be used!). Fruit salad for dessert, and it was a lovely quick meal!

I made this tonight and I agree, it was a quick, easy dinner. For the peppers I used Trader Joes Melange of Peppers (yellow, red, green peppers, nothing else). I would make it again.
