I haven't tried this, but found the recipe on Foodfit.com and may make it for Mother's Day. Can something this easy and low cal really be good??? :D

editing to add it looks like the left out the nutritional impact of the pie crust. :( But still pretty darn good!

Strawberry Chiffon Pie

This recipe serves: 8

Preparation time : 15 minutes

Ingredients
1 envelope plain gelatin, about 2 1/2 teaspoons
3/4 cup cold water
1 pint strawberries, plus 8 strawberries for garnish
3/4 cup sugar
1 tablespoon fresh lemon juice
pinch salt
2 egg whites
1 9-inch crumb crust, baked



Cooking Instructions
1. Place the cold water in a small heat proof dish. Sprinkle the gelatin into the water. When the gelatin has absorbed the water, melt the mixture by placing the dish over a samll pot of simmering water. Set aside and let cool to room temperature.

2. Hull 1 pint of strawberries. Puree them with the sugar, lemon juice and salt in a blender or food processor. Transfer the strawberry mixture to a large mixing bowl.

3. Stir the gelatin mixture into the strawberry mixture and refrigerate for 30 minutes.

4. Whip the egg whites to soft peaks and fold them into the strawberry mixture. Pour the mixture into the crumb crust and refrigerate for several hours until set.

5. To serve, cut the pie into 8 pieces and decorate each piece with a strawberry.

This is pretty tasty! I made just the filling and used Splenda insetad of sugar. I poured the finished concoction into 5 ramekins (nice and full!) and just had one as a late night snack. nice and fluffy and a pleasant springtime snack.

Plus made this way it's only 41 calories (4 net carbs if I calculated that right!) - that includes minimal calories from the Splenda. I detected no aftertaste as I sometimes do with baking Splenda - just pleasant strawberry yumminess.

Per Serving (based on 5 servings of filling, made with Splenda): 41 Calories; trace Fat (6.2% calories from fat); 2g Protein; 5g Carbohydrate; 1g Dietary Fiber; 0mg Cholesterol; 51mg Sodium. Exchanges: 0 Lean Meat; 1/2 Fruit; 0 Other Carbohydrates.

I may sprinkle some cookie crumbs over my next serving, or perhaps shave some chocolate over the top, to make it extra indulgent. But trust me folks, it's hard to top this for a nice dessert that has almost zero scale impact!
