Since I've made a few of the recipes you've shared (thank you!) here's a quick and easy NOT low-fat recipe for Sunday mornings! (From Contessa on TV a few weeks ago.)
1 1/2 cups flour
3 tablespoons sugar
2 teaspoons baking powder
1 1/2 teaspoons kosher salt
1/2 cup sour cream (use tried and true brand-makes a difference)
3/4 cup milk (a little more for not-so-thick cakes)
2 eggs
1 teaspoon vanilla
1 teaspoon grated lemon zest (more=too much flavor)
4 RIPE bananas divided in 1/2 (I cut length-wise and then slice 1/4" thick)
Mix together ing. from flour through salt. In a separate bowl, mix together sour cream through zest. Add the wet ingredients to the dry ones, mixing only until combined.
Ladle the pancake batter on to griddle (I make 6 pancakes total). Distribute evenly 1/2 of the chopped bananas on each pancake BEFORE flipping. Cook just until bubbles start on top and the underside is nicely browned. Flip the pancakes and cook for a minute or so, until golden on bottom. Serve with the remaining sliced bananas, REAL (REAL--make huge difference) maple syrup and a quick hit or powdered sugar.
These are extremely filling and serve about 2.5 people. My husband will nuke the 1 or so we have left over the next day for a snack!
