This was posted on the potluck thread a couple of days ago. We needed a salad for dinner last night, so I gave this a try. YUM YUM YUM!!!! Both DH and I thought it was a real winner!!! Thanks for sharing the recipe!

Marinated Orange-Strawberry Salad
from Cooking Light, July/August 1994

2 cups orange sections
1 1/2 cups sliced fresh strawberries
1/4 teaspoon ground cinnamon
1/4 teaspoon ground black pepper
1/8 teaspoon salt
1 tablespoon honey
1 teaspoon olive oil
3 cups tightly packed torn leaf lettuce
1 tablespoon pine nuts, toasted

Combine first 7 ingredients in a large bowl, tossing gently. Let stand 30 minutes. Add lettuce and pine nuts, tossing gently to coat. Yield: 4 servings.

This does look very yummy and spring-y. Think I will make it next time I need to take a side dish for a potluck or other occasion.

Yes! I have to bring a side dish for our day-care center's "Teacher Appreciation Luncheon" next week. This sounds perfect.
