HI! I am new to this BB and have been having a lot of fun going through it. I love to cook and try new recipies. I have been a CL fan for about 4 years now.
Just felt like throwing this question out?
So what are you all making tonight.
After my tutoring session with a second grader and a meeting at my school (I am a teacher) I am baking some cookies for a friends b-day party then have some left over roasted clementine chicken from the (Dec. 00) issue. It was awesome. Probably adding some Jasmine rice and white chocolate pudding that I made yesterday.

Tonight is the blackened catfish from this month's CL, cheesy grits and steamed fresh green beans. Well, as fresh as they can be considering it is Feb in Ohio http://www.cookinglight.com/bbs/smile.gif

Tonight's dinner will feature chicken rubbed with rosemary and thyme and roasted in a begrudgingly slow oven with a zillion cloves of garlic. Accompaniments will include crusted peasant bread on which to spread roasted garlic, roasted sweet potatoes and another side dish which seems elusive but is most definitively green.

Wow! I'm actually not planning dinner tonight as I will be with my grandparents. However, I was proud of last night's effort, so I'll share... We had baked beans with lean bacon, boston brown bread, brussels sprouts with walnuts and basil and a baked squash caserole (our very own squash, too.) We are going to a friend's house for dinner, which is a nice treat during the week. She only lives a couple of miles away so it isn't a big trip which is hard during the work week. I think she is making a roasted chicken with stuffing and mashed potatoes. Mmmm. I am going to bring dessert but I am not sure what yet. Maybe something simple like brownies or chocolate chip cookies.

I have yoga tonight, so dinner will be popcorn sprinkled with asigo cheese while watching the last half hour of ER.
Has anyone tried the cumin popcorn recipe in CL awhile back? I've been thinking about that.........

Tonight we are having a meal that I've been trying to make for weeks - and due to schedules and illnesses, I haven't been able to!
Anyway, we are trying the Indian-Spiced Shrimp Wraps from an old CL issue. The side dishes are cucumber raita, Indian-spiced potatoes (very yummy!), and broccoli with a little lemon and ajwain.
Finally someone asked on a night that I have a menu planned http://www.cookinglight.com/bbs/biggrin.gif . Usually I don't do this much for a weeknight (or even a weekend!).

Tonight we are having the herb-crumb coated chicken with the squash-rice casserole (or the smashed potato and broccoli casserole - haven't decided yet - any preferences?) and lemony brussels sprouts.

Welcome to the bulletin board Karen! Tonight, my CL dinner club is meeting and we will be having the following:
Steamed Vegetarian Dumplings
Hoisin Barbecued Chicken
Stir-fried Broccoli with Oyster Sauce
Shrimp Fried Rice
Easy Lemon Ice Cream with Gingersnap Cookies
I'm looking forward to this because I do not usually make Chinese food at home.

I am making a stir fry tonight. It was supposed to have been for last night, but I had chagned to artichokes and linguine with clam sauce at the last minute.
I have some bok choy, some broccoli, some leftover cauliflower, snow peas, chicken, and whateverelse I can think of to throw in there! I use the sauce from a CL recipe for a pork stir fry. Other than that, it's a free for all.

This is one of those rare occassions when I totally give in to DH. We are having cheesy crockpot chicken (it's made with cream of chicken and Nacho Cheese soup). I also put some whole potatoes in the crockpot. I'll probably have a salad, but DH won't touch salad.

Borlotti beans with tomato and sage, accompanied by brown rice, sauteed mushrooms, roasted red and yellow peppers, steamed broccoli with garlic, and a tossed salad.

As for dinner, I am being taken out for sushi and have been looking forward to it all week! My evening class was cancelled and I actually get to go out to dinner--yippee!
Since I'm going out, I'll go ahead and post what I'm making tomorrow night, which is...Linguine with White Clam Sauce. This was specially requested by a friend of mine (I was thrilled he requested such an easy recipe!) Haven't decided on any sides yet--but am guessing I'll just do bread and salad. Have a good night everyone!
Its Mexican night for us with corn tortillas topped with pinto beans, shredded venison, raw veges (red onion, green pepper, tomatoe) and just a bit of Mexican cheese and chipotle-yoghurt sauce with squash on the side and fruit for desert.

We are having Pork Chops with chunky tomato sauce. It's from an old issue and it's pretty tasty. Don't know what I'm having for a side, maybe coleslaw.

I tossed a beef stew in the crockpot this morning. Two stews in one week for me. I had the chipotle chicken stew from the December issue on Monday and it was fabulous.

It's icky out - hence I'm thinking a soothing, cozy, heartwarming risotto. It might be 8:00, but too bad!
[Later: It was an ad hoc blend of Arborio rice, Vidalia onion, spinach, Parmesan, basil, and not much else, and it was good! We had CL's Easy Fish Fillets, a new regular for us, with local flounder this time. On the side was 1/2 sweet and 1/2 white potatoes (I got white sweet potatoes at the farmers market, a local yummy, and hubby got out one sweet and one idaho white, unawares, so we split them). Also, turnip greens with chopped shallots and a touch of broth. It was yummy and vitamin packed dinner.

Dutch Pear Baby (an oven pancake with topped with pears) from the J/F 2000 issue and Morningstar Farm Breakfast Patties. A quick, easy and tasty dinner. And, as a bonus, it appeals to everyone in the family.

I made Skillet Chops and Rice from the 15 Minute/5 Ingredient cookbook. Served it with fresh rolls and steamed broccoli.
Simple and nutritious for a busy weeknight!

wow! I can't tell you how nice it is to be "around" people who enjoy healthy meals and who are "creative". Dinner was great for me and I hope everyone elses was great. I know just reading the list, I was hungry all over again! Until tomorrow. Good night and thanks for the warm welcome.

Claire - can you post the recipe for the dutch pear baby - It sounds interesting. I know I have that issue at home but I am at work and would love to know the ingredients. Sounds like it might be a nice comfort food dinner for a friday night.

Lauren: Hi! I just happened to have that one nearby. Here it is:
PEAR DUTCH BABY
4 Bartlett or bosc pears, cored and thinly sliced (about 1 lb.)
1/4C packed brown sugar
1/4 C fresh lemon juice
1 C all-purp. flour
1 C 2% reduced-fat milk
3 TBSP granulated sugar
1/4 Tsp salt
3 large eggs
2 Tsp butter or stick margarine
1 Tbsp powdered sugar
1. Preheat oven to 425.
2. Combine sliced pears, brown sugar, and lemon juice. heat a 10-inch cast-iron or heavy oven-proof skillet over medium heat. Add pear mixture; saute 5 min. or until pears are golden. Remove pear mixture from pan, and keep warm.
Lightly spoon the flour into a dry measuring cup, and level with a knife. Place the flour in a large bowl. Combine the milk, granulated sugar, salt, and eggs, stirring the mixture well with a whisk. Add the milk mixture to the flour, stirring with a whisk until well-blended.
4. Melt the butter in pan. Pour batter into pan. Bake at 425 for 25 minutes or until puffy and golden. Spoon the pear mixture into center of pancake; sprinkle with powdered sugar. Cut into 6 wedges. Serve immediately. Yield: 6 servings.
