View Full Version : KA White Whole Wheat Flour ???

I want to use whole wheat flour in a muffin recipe and wondered how the results would be. I have only used this flour when making bread and did not know if it would work well in other uses. Any suggestions for substituing this for all purpose flour?

I've used it in place of regular whole wheat flour. I would think you would need some AP flour, in combination with the white whole wheat, to get the right texture. This has just been my experience with baking. I make a lot of muffin recipes and frequently use a combo of AP and WW flour. I usually use a ratio of about 2/3 AP to WW flour.

Editing to add...I have made muffins with all WW pastry flour, but that has a lighter texture than regular WW flour.

If you are going to substitute it for all-purpose flour, you might try doing it by weight instead of measurement (using 4oz/cup). I got this tip from someone on the board but I can't remember who. It has definitely improved the results I get with white whole wheat flour. Like Vicanddi suggested, you might also try using whole wheat pastry flour. I like the way that works in things like muffins better than the white whole wheat flour.
