Hello Everyone! I thought you might be interested on our cinco de mayo celebration meeting we had this past friday....
The out come was a "Gut Busting Yum!" we always have a lot of food at our meetings so we like to bring tupperware to take goodies home!This is what we had on the menu:
Appetizers-
Chipotle and Raspberry Fish Spread/Smoked Fish spread- Secret recipe,We request this at every meeting, or you can't get in!
Roasted Poblano Guacamole with Parsley and Garlic- Past CL recipe
Chicken Empanadas- CL May'04
Chicken Salpicon (caution addicating but muy picante aye!)- Past CL recipe
Chile de Arbol Salsa-Food network recipe
Sides-
Southwest Barley Salad-Light and Tasty recipe
Main Dishes-
Sweet and Spicy Chili- Unknown recipe source, either that or I don't remember...err..and I wasn't even drinking margaritas that night!
Chile Colorado- CL Nov'03,word of advice stick to the traditional way of cooking it in a pot!

Banana Quesadillas-Emeril recipe
Cafe con Leche Creme Cake- CL May'04

Coronas, Margaritas (Harry and David's mixes are amazing!), and White Sangria- Unknown recipe source, but really good and refreshing!
