After getting mt "best of 2" I thought I would try white chocolate apricot muffins. However, when I searched the BB, I came up with several negative reviews!! Being the stubborn person that I am I took this as a challenge, the ingredients looked so good, and I happened to have them on hand. SO....I made them (they were very quick). I followed the instructions exactly, except I used white chocolate chips instead of buying solid chocolate and chopping it and I made some blackberry some apricot ones. I have to say they turned out very well. They were delicious and I loved the jam inside. They were pretty sweet, though, maybe a tea time muffin instead of a breakfast one...just thought I'd add a positive review http://www.cookinglight.com/bbs/smile.gif

Sure... I actually don't have my book with me now, but I remember it since I just made it...

White Chocolate Apricot Muffins

1 3/4 cups flour
1/2 cup sugar
1/2 tsp salt
1 1/2 tsp baking powder
2 ounces white chocolate, chopped
1 egg
3 Tbsp butter, melted
3/4 cup 1% milk (I used soy milk as my Dad's lactose intolerant)
1/2 cup apricot (or other type) preserves
2 Tbsp sugar

Combine flour, sugar, salt, baking powder and white chocolate in a large bowl, stir well. Lightly beat egg in seperate bowl and add margarine and milk. Make a well in the dry ingredients and add wet mixture, stirring until just moist. Grease a 12 muffin muffin tin and spoon about 1-2 Tbsp batter into bottom of each one. Top with about 1-2 tsp perserves (don't spread over muffin, just place in the center.) Top each muffin with remaining better. Sprinkle each muffin with white sugar. Bake at 400 about 20 minutes or until knife comes out clean. (I actually baked about 15 min on 375, but then again that's convection, and my oven bakes hot I think.) Good luck!

Thanks for the recipe. I made them in a mini muffin tin last night and I used strawberry preserves instead of apricot. They were wonderful. I brought them into work this morning and they were gobbled up in a matter of minutes. Plus you have to love how easy they are to make - the recipe took me no time at all.

Review: Cornmeal Cheese Twists from CL 12/00

I fixed these to go along with soup. We thought they were good. Nothing to shout to the world about, but good enough that I will do them again.
