I have lost a favorite magazine shown on the cover of another Low Calorie recipe magazine. It was shrimp with aspagaus tips, basil, and plum tomatoes (I think) with angel hair pasta. It was wonderful, and I've been waking up at night trying to remember all the ingredients. Does anyhow have the recipe, or anything similar? Many thanks in advance.

In the April 2000 issue of CL there was a recipe for Shrimp and Feta with Angel Hair. It has shrimp, plum tomatoes, green onions, ripe olives, dried dill, garlic and feta cheese. No asparagus or basil though. Can post if your interested.

I hardly ever cook pasta using a recipe - so I make one similar to what you're asking for - but don't have any amounts.

Cook the pasta.

I would sautee the shrimp in white wine.

I would then cook down the plum tomatoes with some minced garlic & the basil, maybe a little olive oil. Steam the asparagus tips.

Then toss everything together. Perhaps sprinkle with a little salt. Top with shredded parmeasan cheese - or add gaot cheese to the tomatoes while they cook.

Maybe that's close?

I made that pasta from the April issue--it was simple and fabulous! http://www.cookinglight.com/bbs/smile.gif

Leanne,

Thank you so much. Wine was the ingredient I had forgotten...I'm pretty sure I can recreate it now.
