Ok-I've never posted a topic before so here goes... You all have such wonderful ideas maybe you can help. I really need some tasty ideas how to make spinach. I like spinach and I know it is sooo good for you but I don't have a clue as to what seasonings to add or what to make it with! As you can tell I am new to this cooking thing but I am trying very hard!

Funny that you should ask about spinach-I just finished having some leftover from last night with my lunch! I'll tell you a very simple way that I love to prepare it. I just buy it by the bag, rinse in a colander to get off any grit, then I crush about 8 cloves of garlic in some olive oil (you could use spray if you prefer) then add the spinach with the water still clinging. Now you can add any flavoring that you like-salt and pepper, crushed red pepper flakes, balsamic vinegar, even sesame seeds and ginger! Cover it and let it wilt for only about 3 minutes. Done!! THis is delish- you may want to buy more than one pkg. as it wilts down to almost nothing and it is easy for one person to eat the whole amount! Good luck! -Becca

The way I cook spinach is very similar to the way Becca cooks it. Most fish is delicious served on a bed of spinach.

Another thing I like to do is use spinach on a sandwich in place of lettuce. We like it on a hummus sandwich, and also with sliced chicken or turkey with tomatoes, mayo and a little grated asiago cheese.

Also try using the "search" in the upper right corner of the screen and searching for spinach -- but I'd advising looking in "subject line only" first, because I came up with 35 hits when I tried it, and you might get ten times as many if you search the complete message text.

I have a recipe called "Chicken Florentine with Lemon Mustard Sauce".
I don't think it's lowfat but it sure is good. You use boneless, skinless chicken breasts pounded thin. Dip in egg or milk, coat with bread crumbs seasoned with parmesan cheese. Cook in skillet in very little oil till brown and cooked through. When the chicken is almost done, wilt fresh spinach in the olive oil method till done. In a small skillet, combine a little butter, pinch sugar, lemon juice and Djon mustard. Cook 2 minutes till thickened. Serve chicken with spinach on top and a drizzle of the lemon mustard sauce. YUM YUM

you can use it on top of pizza, in dips, a lot of sauces would support spinach. I have even put it in soup...yum!

oh, another way is to do the olive oil, garlic but add ONIONS! red OR do a spinach salad - baby spinach, red onion, cheddar cheese (shredded) and egg with tangerines...we had that the night before as an accompaniment

I had a huge bag of baby spinach from Costco...so tonight I made a CL recipe for creamed spinach. It has shallots, light cream cheese and skim milk in it.

It was delicious!

here is a great recipe for a spinach casserole

spray a casserole with a cooking spray,
place a layer of cooked squeezed spinach,
a layer of shredded cheese of your choice,
a layer of mushrooms and sprinkle with garlic salt,

repeat layers....

bake at 350 degrees for 30 minutes or so until the cheese has melted and liquid is bubbly...

this is a great recipe for non-spinach eaters to try too...

Sometimes I spinkle cooked spinach with parm. cheese. It makes it less bitter. I love spinach anyway, but this hint is good for kids.
