I have a question regarding this recipe. I made this the other night, and had a problem. I made it according to directions with ingredients including buttermilk (I haven't had a lot of luck with it except in Texas Sheet cake)and baked it in a dark metal 8x8 pan coated with Butter flavored Pam. It is one of these pans that has a double layer that supposedly offers more even cooking. Anyway I took the cornbread out about 5 minutes early and let it cool. I then went to cut it and found the sides and bottom pretty brown. When tasting the cornbread the inside was very good. But the outside where it was browned had a very rancid taste.(I can only describe it as off) I almost threw the whole thing out. But decided to just cut the edges off of the cornbread. The remainder was delicious. Any thoughts as to what happened.??? Please help, Cornbread is one of my favorites to make but I seem to be horrible at making it. Also had trouble with Double Cornbread recipe from 2000. Maybe I'm destined to not use Buttermilk. And yes, I shook the Buttermilk very well. And checked the expiration date. Help!! LaurieC

I don't really know what happened but since it was on the outer edges perhaps it had something to do with the butter-flavored spray. Try it again rubbing the pan with a little oil on a paper towel. I don't think it was the buttermilk since the inside was good. Don't you hate it when these strange things happen when trying new recipes? Whenever you use a dark metal pan (or glass), you need to lower the temperature of your oven by 25º. That's why it got so brown on the outside. I have no explanation, though, as to why it would have tasted "rancid"....perhaps that's what "burnt corn bread" tastes like? I'd say try it again with a lower temperature, and see if you still get that "rancid" taste. Good luck! http://www.cookinglight.com/bbs/smile.gif

Thanks for the responses!! I'll try it next time with a glass baking dish. And my oven does run a little hot, so I'll try to lower the temperature. LaurieC

I did a search for this recipe, but can't find it. Could someone post it? I am new to CL and only have the last two magazines. I also have the Complete CL cookbook, but didn't find it in there either.
