I made the King Edward soup (CL1/01) for dinner the other night and my husband and I really liked it. It's got great ingredients and pretty good flavor plus it's easy especially if you use a food processor. You could add beef if you wanted more substance. I served it with a greens/garlic bruschetta from Epicurious.
