View Full Version : Did anyone make Fort Davis Apple Cake - Dec '00?
So, I know I'm behind on my issues, but just looked through Dec. last night and wondered about the Fort Davis apple cake...I did a search and found nothing, so I don't know if that meant it is bad or too un-noticeable to try! Thanks!

Thought I'd pull this request back up - I was going to make it this weekend but I went out of town instead and it looks great in the magazine. Hope someone has tried it for a review!

hello, i made this cake just the other day. it was very good. i should of cut up the apples even smaller though. they all seems to float to the top during the cooking and when you flipped the cake over it made the bottom kinda mushy. The glaze was fantastic it tasted just like caramel.

I finally tried the Fort Davis Apple Cake (almost a year late!), and my husband and I really liked the flavor. I did have a problem with the glaze though. I cooked it for what seemed like forever, and it took a really long time to turn "light golden brown". I finally took it off the heat when I thought it had turned color enough, but I'm wondering if I didn't wait long enough, because it never did solidify on the cake. When I poured it on, it just ran off and pooled around the base of the cake. Of course I spooned it back over the cake again and again, hoping it would soak in or something, and some of it eventually did. But even after it sat in the refrigerator for a day, the glaze was still runny and sitting around the base of the cake.
I did use a substitute for the buttermilk -- regular skim milk with lemon juice stirred in. Could that have been my problem? I can't remember exactly the amount of lemon juice I used, but it was somewhere around 1 1/2 tsp. I have used that substitute for buttermilk before with no problems, but maybe the glaze is more sensitive to that?
Any advice would be appreciated, because I would like to make this again.
By the way, I also found that my apple pieces floated to the top while baking. I wish I had read this post before making it, because I'll definitely cut the pieces smaller next time!
