View Full Version : Moosewood's Stuffed Zucchini Recipe?

I just bought the Moosewood Low Fat last night and was searching for favorite recipes that others have posted from it. In doing so, way back in July, Susann posted that she had the stuffed zucchini recipe with cheese. Could someone post that recipe for me, it sounded great!
Low Fat Moosewood appears to be incredible, it will be my morning reading, oh no, will I need the rest of the series??

Ok, my computer is doing odd things, so hopefully this works...

Stuffed zucchini, turkish style

4 m zucchini, halved lentgthwise
3 tbs butter
3/4 c finely minced onion
3 cloves crushed garlic
3 beaten eggs
1/2 c crumbled feta cheese
2 tbs freshly chopped parsley
1 tbs fresh chopped dill or 3/4 tsp dried dill weed
1 1/2 tbs flour
salt and pepper to tase
paprika for the top

Scoop out the insides of the zucchini to leave a half inch rim. Chop the innards into little bits and cook in butter with onion, garlic, salt and pepper until onions are soft. Combine with flour, cheese, herbs and beaten eggs. Correct salt and pepper. Fill the zucchini cavities and dust the tops with paprika. Bake at 375 for 30 minutes, or until the filling solidifies.

I make a few changes-use all egg whites and decrease the butter to about 1 tsp. Also, scooping the zucchini works well with a melon baller. Let us know when you make them. Enjoy!

Thanks so much Susann for recipe, we will be trying it this week, I need to get zucchini. This will be wonderful this summer when everyone is wondering what to do with ALL of that zucchini!! Thanks again!
