I have just discovered pumpkin seed oil,but have no idea for the use of it.Has anyone ever used it? And are there any recepies for it? What is it usually used for?

Diana -

I've used pumkin seed oil -- mostly for salad dressings (mixed with cider vinegar). This can be used for a regular green salad, but it's also great tossed with pasta and vegetables for a light summer meal. It's a relatively guiltless addition, as the oil contains plenty of the vitamins A, E, C and K.

I've also heard of the oil being used in cakes and other baked goods, but have never tried it myself.
