Dh and I are planning a trip to Tampa at the end of June/beginning of July. We'll be staying in a hotel equipped with a kitchen in order to cut down on expenses (yes, vacation where mom still has to cook!). I was curious as to what everyone would recommend for quick lunches and dinners (breakfast is included...yay)on the road. Thanks :D!!

We're going on vacation at the end of June and are also planning to prepare most of our lunches and dinners ourselves, so I'll be lurking on this thread to get more ideas! :)
I love pasta for quick meals that don't need lots of ingredients.
Spiral pasta with some halved cherry tomatoes and diced mozzarella, tossed with a bit of prepared pesto would be good (and any leftovers are good chilled).
Or a big pasta salad: Tricolor spirals, diced cheese, diced deli meat of choice, broccoli and carrot pieces cooked with the pasta, etc. and bottled Italian dressing.
Serve pasta with some crusty bread and you're set!
The roasted pepper spread sandwiches in the June issue of CL are easy, require no cooking, and taste very good.
What about getting a rotisserie chicken from the store and shredding the meat for sandwiches or chicken tacos?
One thing I find vacation kitchens tend to lack is storage containers for leftovers- I usually bring 3 or 4 tupperware containers of various sizes with me. If they don't get used for food they can help keep souvenirs and other small stuff together in your luggage.
