I made the Couscous Salad with Chicken and Chopped Veggies for lunch from the May C/L and it was outstanding. Very easy to prepare and I is really a wonderful make ahead to bring to work.
I made it pretty much per the recipe as I like to do that the first time. I did use my own chicken breasts instead of rotisserie chicken - it's so simple to put a few extra breasts on and I find rotisserie chicken to be too greasy. I also used whole wheat couscous made in the microwave per the instructions on the Trader Joe package.
All in all an enthusiastic thumbs up.
