Hi everyone-I found this recipe and am making it tonight.

fiesta eye of round roast

1 oven bag, large size
1/4 c flour
1 16 oz. jar chunky medium salsa
1 clove garlic, crushed
3 to 3 1/2 lb boneless beef eye of round roast
7 m carrots, diagonally sliced
4 m red potatoes, cut into quarters
1 green or yellow bell pepper, cut into strips
1 medium onion, cut in thin wedges

Preheat oven to 325. Shake flour in bag; place in 13x9 baking pan. Add salsa and garlic. Squeeze oven bag to blend flour. Place roast in bag; turn to coat roast with salsa. Arrange vegies in oven bag around roast.
Close oven bag w/nylon tie. Cut 6 1/2 inch slits in top.
Bake 2 to 2 1/2 hours until roast is tender and meat thermometer reads 145. Let stand in oven bag 5 minutes before slicing.

Makes 12-14 servings

The roast I have is closer to 1 3/4 lbs. We are not big meat people (well, at least I am not), so I don't know if I should decrease the cooking time by half before checking the temp. Any suggestions? Also, I will probably keep the vegie amt. the same (maybe even add more) and add more than 1 measly clove of garlic!

You have to be careful when using a cooking bag. While most everything I've had has been good in a cooking bag, meat has been esp. difficult. If you have a thermometer (the kind you can leave in the meat and the outside is the timer/temp.) I would use that. If you don't, I would cut the time in half. Remember the meat is steaming AND cut the carrots a little smaller since you are cutting the time.

I agree with you luv2cook. That is exacty what I do. I know this is a day late but just had to agree! I hope the roast came out ok. Let us know.

Thanks luv2cook and Karen-I followed your advise and cooked the roast for about an hour and 25 minutes, then I raised the temp. to 350 and cooked the vegies an additional 20 minutes. I also added 1 tsp of cumin and 1/2 tsp. of Penzye's chipotle seasoning (which may have been too much since I used hot salsa in the recipe!). I used 3 cloves of garlic and more vegies than the recipe originally called for. It really was quite good and I will make this again.
