View Full Version : ISO: Italian Chicken for tonight

I had planned on making this recipe tonight and I'm not sure if it is the name of it. It is a CL recipe from the Dec issue from the reader's recipes. It has spinach and ricotta cheese put into a 9 X 13 pan and then this is topped with breaded chicken and then the chicken is topped with tomatoes. I had intended to bring my issue of CL to work so that I could make my list and stop at the grocery on my way home tonight. In my rush to leave this morning (with three kids in tow) I forgot my magazine.

I think this is the recipe that you want, but it doesn't have ricotta cheese. This is from Dec 2000 and otherwise like the recipe you described.

Chicken Italiano
Cooking Light, December 2000

2 (10-ounce) packages frozen chopped spinach, thawed and drained.
1 (8-ounce) block fat-free cream cheese
Cooking Spray
1/2 cup Italian-seasoned breadcrumbs
4 (4-ounce) skinned, boned chicken breast halves
2 teaspoons olive oil
4 (1-ounce) slices part-skim mozzarella cheese, cut in half
1/4 teaspoon dried oregano
8 (1/2-inch-thick) slices tomato
1/4 cup (1-ounce) grated fresh Parmesan cheese

Preheat oven to 350

Combine spinach and cream cheese. Press spinach mixture into bottom of a 13x9 inch baking dish coated with cooking spray.

Place breadcrumbs in a shallow dish. Cut each chicken breast in half horizontally to make 2 cutlets. Dredge chicken in breadcrumbs.

Heat oil in a large nonstick skillet coated with cooking spray over medium-high heat. Add chicken; cook 2 minutes on each side or until lightly browned. Arrange chicken over spinach mixture. Top with mozzarella, and sprinkle with oregano. Top with the tomato slices and Parmesan. Bake at 350 for 30 minutes.

Spoon one-fourth spinach mixture onto each of 4 plates; arrange 2 chicken cutlets and 2 tomato slices over spinach mixture.

Chicken Italiano from dec 00 pg 151.
this recipe was tremendous. the chicken with the spinach and tomatoes was a wonderful combo. In the recipe they tell u to cut the chicken in half horizontally, i did not want to risk cutting myself so i just pounded the breasts to flatten. worked out great!
