Buddie - I have to tell you that I just got around to making your Hot & Smokey Baked Beans and they are the best I have ever tasted. Love those chipotles. Thanks for sharing a great recipe.

I found it....here it is....looks AWESOME! I will definitely try this.
HOT AND SMOKEY BAKED BEANS
(note: i only used 4 chipoltes the first time around and that was good....maybe 5 next time) =)
Serve these hot or at room temperature.
6 bacon slices
1 1/2 cups chopped onion
1 1/4 cups purchased barbecue sauce
3/4 cup dark beer
1/4 cup mild-flavored (light) molasses
3 tablespoons Dijon mustard
3 tablespoons (packed) dark brown sugar
2 tablespoons Worcestershire sauce
1 tablespoon soy sauce
4 to 6 teaspoons minced canned chipotle chilies
6 15- to 16-ounce cans Great Northern beans, drained
Preheat oven to 350°F. Cook bacon in large skillet over medium heat until crisp. Transfer to paper towels and drain. Transfer 2 1/2 tablespoons bacon drippings from skillet to large bowl. Finely chop bacon; add to bowl. Add onion and next 7 ingredients to bowl and whisk to blend. Whisk in 4 to 6 teaspoons chipotle chilies, depending on spiciness desired. Stir in beans. Transfer bean mixture to 13 x 9 x 2-inch glass baking dish. Bake uncovered until liquid bubbles and thickens slightly, about 1 hour. Cool 10 minutes.
Serves 8 to 10

You gals will love them. I have made this recipe 3 times now. They are so D__ good! Makes a lot and we ate them all (only 2 of us here)(not in one seating http://www.cookinglight.com/bbs/wink.gif). I had a time finding chipotle chilies here in Toronto - finally did - and have used the one 'tin' for the 3 batches (just kept them in the fridge). Man are these ever good beans!

Did I read somewhere that you can freeze beer - as in the leftover in this recipe - the one I bought was an Irish oatmeal at $3.99 a bottle - I just seem to recall that it could be frozen???? Anyone know?

What type/brand/flavor of BBQ sauce did any of you guys who have made these used? We LOVE great baked beans but aren't great fans of comercial sauces for grilling purposes, so I am pretty ignorant of what a good one for this dish would be. Thanks ahead of time for the input!

Hi Rosen - here in To we have a Diana's brand - fairly common - I used the chicken and rib one - I don't think you have to buy 'really expensive' for this - the flavors are so blending - it truly is an exceptional baked bean recipe.

I had more of a problem getting a 'dark' beer - now that was expensive and I did end up freezing it - so we shall see......

Are chipotle chilis in adobo sauce different from just chipotle chilis? I was so excited; the grocery store finally started carrying the chilis in adobo; I'm going to make the chipotle chili stew tonight or tomorrow night. Could I use some of those chilis in this recipe (the baked beans), or look for plain chilis? I'm excited about using this new ingredient!

I tried this recipe this weekend and loved it! The flavors are terrific. I cooked a pound of dried Northern beans instead of using the canned beans. Since it made a lot and we can only eat so many beans at one time http://www.cookinglight.com/bbs/biggrin.gif, I froze half of them.

Let me know how the frozen dark beer turns out. I had a lot left over also but my husband decided to drink it so I didn't try it! LOL
