Hi Shelley! Your mailbox is full and I don't want to retype this later in case it is still full. So I copied and pasted it onto this thread!
I did think your title was funny and definately intriging!! ;)
I don't have a small muffin pan so I'm not sure of the size. What I would do would be cut up a piece of paper the size that the recipe says for the regular muffin pan. I would put it in the regular muffin pan and see how high up the paper came up the sides. Then I would try to duplicate the proportions with a in the mini muffin pan. That would give you a good idea about size. Does that make sense? I recall that the phyllo dough did stand up above the muffin tins a bit. I definately recommend mixing the feta cheese into the spinach mixture instead of leaving it all on top. Hope your group likes the recipe as much as we did!
