OK, I did a search for this and didn't find one.
Made these for dinner tonight...... UGH. They tasted fine (and particularly the salsa was great - although my store didn't have papaya, so I used all mango and it was delicious. It would have been even better with the papaya, I'm sure). But the burgers themselves were a disaster. Not so much the taste, but the TEXTURE! The burgers were soooo wet, I could barely form them. I froze them for 10 minutes to keep them together and when I grilled them they fell COMPLETELY apart! They were more like sloppy joes than burgers, but even that's not a good description, because with sloppy joes you still have to chew little chunks of meat. This was pure mush. Literally. And they were definitely cooked through - I even used a thermometer on them to make sure. My DH said it was like eating tuna salad that was made with lots of mayo - have you ever had that before? You know how it's really mushy? Yucky. But again, the taste was good. I think the problem was the sweet and sour sauce called for. It made the whole mixture way too wet. And I think the turkey may have been ground too finely too. If I ever made them again (and I probably wouldn't - I like the Tarragon Turkey burgers much better), I'd use either much less sweet and sour, and a whole lot more bread crumbs.
