Has anyone tried the breakfast casserole in Dec 00 issue??? Wanted to make for company Xmas morning and they have already had the Farmer's Casserole. Thanks, LaurieC

There is a previous thread regarding the casserole. If I remember correctly someone had trouble getting it to set, but look back to last week....

I was going to make that but changed my mind to the leek and bacon tart. That was wonderful. I did cheat though, and used a store bought crust. Good luck!

Kwormann posted about it. She didn't drain the tomatoes and baked it in a little larger pan. She expected it to bake faster, but it took longer....was probably set but wet. Since I was there, I'll tell you we ate from the outside first and she microwaved the rest. I tasted very good, and I'm thinking of making it for New Years Day, but I'll drain the tomatoes at least partially if they look watery.

Not if you're from Texas (me)! Or California (DH). I grew up with chili served over scrambled eggs (huevos con carne) as a special Sunday breakfast. This was tame for me. If you don't care for it as breakfast, you might think of it for a casual, make-ahead supper or late night dish.

We had this, this morning. I did drain the tomatoes, and cook it longer then called for. I made it in my Pamp. Chef deep dish round stone which made for a good presentation. It was good ( my husband said OK), but I probably won't make it again. It didn't taste lowfat but the taste was diffently Mexican which was a little strange for breaskfast.

we really liked this casserole. i made it into 2 8x8 pans. i froze one and set the other overnight in the fridge. Mine set perfectly and there was no excess liquid. i did not drain the Rotel. This is a great make ahead dish. i enjoyed it for dinner, its not just for breakfast.

I also loved this. I made it at least a week ahead and froze it until a couple of days before Christmas. Put it in the oven Christmas morning to cook while we opened presents. I followed the recipe exactly and had no problems at all, except that I should have made more. Everyone loved it!
