View Full Version : Help: Chicken with Cranberry Salsa (Dec 2000)
Has anyone tried this yet? (From Dec., p. 160 - 30' or less). I'm unable to find the cranberry-orange sauce - does anyone know what it is like? I'm thinking of just using whole berry cranberry sauce with some chopped up orange and maybe orange peel and/or orange juice concentrate. (The picture looks like it has chunks of orange in it). Anyone out there know?

I would think that would be something like the Ocean Spray sauce that comes in a plastic tub (flat like soft cream cheese but larger and not refrigerated), marked for chicken, but found mostly around turkey time. I would not hesitate to use fresh cranberries and make your own (1 c water, 1 cup sugar, bag of berries, bring to boil and simmer 10 min -- or there's usually a recipe for cranberry orange relish that you just process in a blender or processor) or adding orange to purchased cranberry sauce. If the fresh berries are available, they would definitely be my preference, but then I bought 4 bags for the freezer this year and am thinking about buying some more.

I've never seen this sauce before eather. Since I got on this website I realize how much ingrediants are out there that my market doesn't carry. Some things I don't even know what people are talking about! I live in the suburbs outside a large city,but eating healthy isn't that popular. It's a shame.

The recipe sounds great. What if you make your own sauce from the cranberry recipe on the back of a bag of cranberries which includes orange rind etc.?

I made this; it was excellent!
The sauce IS made by Ocean Spray, like Beth said, & is sold in a white tub. I, too, was skeptical of finding it but it was in the same place in the store as the canned cranberry sauce (the jiggly stuff).
Jen, I noticed you're from Vancouver, & I've seen a few other posts from "neighbors" of yours who have had trouble finding various ingredients. Good luck!

I know - it's so frustrating! CL is really good about using "new" convenience items that are out there. The problem is, I live in Canada and it usually takes us 1-2 years to get these items (for some reason that I can't figure out). I live in a very large city and my grocery store is excellent, but these products just aren't available here! It would be nice if CL could offer substitutes for the newish ingredients they suggest - especially in cases like this one, where they've specifically suggested a particular brand that not everyone may be able to get.

I made this the other day and it was excellent! However I couldn't find the Cran-Orange sacue either so I just used the Ocean Spray whole cran sauce. It turned out really well however next time I think I would add some orange flavoring! Good Luck!
Thanks everyone...I got a little behind this week so I'll be making it tonight. I just got the whole berry sauce, and I plan to chop up a bit of orange and maybe add some orange juice concentrate (or Grand Marnier? Yum...) I'm sure it would be better if I followed the suggestion of making my own sauce...but that would defeat the purpose of the "quick" recipe!!

what a unique recipe. i prepared it with the cranberry-orange sauce by ocean spray. i am sure that substituting regular sauce would be just fine. The cilantro cream was good, not all that overpowering of cilantro flavor either.
