I was CERTAIN i had seen a review of this, but my searching has been less than fruitful, so i will go ahead with this...

Very tasty version of a very simple sandwich. The recipe included making a sauce of dijon mustard, sour cream and parmesan then the usual, white bread, ham, tomato and swiss with sprinkling of chives.

So, as usual (sorry for those that hate this), i had to make changes to fit what was in my fridge:

I used cooked bacon rather than ham.
I used slices of a homemade loaf of Italian bread.
I used cheddar rather than swiss cheese.
I put the sandwiches in my cast-iron grill pan and then put foil over the sandwiches and mashed them down with my stack of cast irons that i keep on my stove.

DH was in heaven!! And it was very tasty! I think i would add bacon anyway even if i had ham :) Give this a try if you are wanting something simple but with a little variation--the sour cream sauce was really very tasty! IF anyone needs the recipe, let me know!

I've made this a few times... it is that spread that is the key. I've modified it with low fat cheese/ham, whole wheat bread, and even done it sans ham and all have been very tasty.

I used up the last of my tomatoes from last week's trip to the farmers market in these sandwiches. As noted, above, the spread is delish! My only changes: I used just a wee bit of softened butter instead of the cooking spray (ick), and I used whole grain white bread.

Served with roasted beets & blanched sugar snap peas tossed with a little feta and Champagne vinaigrette. Yummy.

Grilled Ham and Cheese with Tomato

2 tablespoons Dijon mustard
2 tablespoons reduced-fat sour cream
1 tablespoon grated fresh Parmesan cheese
8 (1 1/2-ounce) slices hearty white bread
16 (1/2-ounce) slices 33%-less- sodium ham
8 (1/8-inch-thick) slices tomato (about 1 medium)
8 (1/2-ounce) slices reduced-fat Swiss cheese
2 teaspoons chopped fresh chives
Cooking spray


Preparation
Combine mustard, sour cream, and Parmesan cheese in a small bowl.
Spread 2 teaspoons mustard mixture over each bread slice. Top each of the 4 bread slices with 4 ham slices, 2 tomato slices, 2 cheese slices, and 1/2 teaspoon fresh chives. Top with the remaining bread slices. Lightly coat outside of bread with cooking spray.

Heat a large nonstick skillet over medium heat. Add 2 sandwiches to pan. Place a cast-iron or heavy skillet on top of sandwiches; press gently to flatten. Cook 3 minutes on each side or until cheese melts and bread is toasted (leave cast-iron skillet on sandwiches while they cook). Repeat with the remaining sandwiches.

4 servings (serving size: 1 sandwich)

First, welcome to the board! Just a heads up, this board has a search function (though not always great) so if you are considering making something and want to see if it was reviewed go to the search function in the brown bar at the top (not the open search box) and type in the key ingredients. For example you are looking for a goat cheese stuffed chicken breast recipe type in "goat cheese chicken breast" and it should return some threads with ideas and reviews. I believe the board has been around since at least 2000 so there are lots of reviews available in the archives! Enjoy. :)
