A friend of mine was kind enough to share some of the zucchini and yellow squash from her bountiful garden. Perfect timing because I'd been wanting to try this recipe. At first I thought it was odd to scrape out the pulp before steaming the squash pieces, but it seemed to work out this way. The filling was very good: not too "bready" and just the right amounts of tomatoes and cheese. A very colorful and tasty side dish that would be great at a summer cook-out.
