View Full Version : Review: Corn Bread, Cherry and Bacon Stuffing (Dec 2000)

We were out of town for Thanksgiving, so Sunday night I cooked out family Thanksgiving dinner. I decided to try the Corn Bread, Cherry, and Bacon Stuffing recipe in December 2000. I wanted to report that it is excellent!! There was a fair amount of work involved to make the recipe (ie. chopping vegetables, making the cornbread croutons), but it was well worth the effort! The dried cherries gave it a unique flavor. My husband says this is now one of his favorite stuffing recipes. It was definately a hit.

The one change I made was I added some extra chicken broth before I put it in the oven because it looked dry. The end result was very moist.

Next time, I might consider adding some pecans or toasted almonds to give it a little crunch.

This one is worth a try...

Thanks for your post. I just bought the ingredients to try this. It sounds so different than any others I have tried. Your comments gave me just the nudge I needed to give it a whirl.

I really want to try this receipe for Christmas dinner. Two questions. Do you think I can make the whole dish the day before or will this become to moist sitting overnight? and where do you find tart cherries?
Has anyone else tried this yet?

I don't think you will be disappointed with this recipe. You can probably make it the night before. If it seems too dry, I would just add some broth before I put it in the oven.

I got the dried cherries in the bulk section of the supermarket. If there is a Trader Joe's near you, I know they carry them. Do think about adding some pecans or other nuts for some crunch.

I have to admit I was disappointed. It was alot of work (for what it was). I thought it was good, but it didn't go over real big. And now what do I do with the left over tart cherries? I had to buy more than I needed.

So sorry you didn't like this! http://www.cookinglight.com/bbs/frown.gif We really liked it and I will definately make it again, especially with such a positive response from my DH. I agree it was somewhat labor intensive, but I felt it was worth it. What exactly did you feel was the problem?? Just too much work for the outcome? It just goes to show you that we all have different tastes!!

I know I have used dried cherries in other dishes. Once the Xmas dust settles, I will look around for some recipes and post one or two we have liked that have them as an ingredient.

I thought it was good, it was the rest of my family that thought it was only OK. You know how it is, I don't mind a labor intensive recipe I just want a "Wow, this is great!" I was thinking that one of my problems might have been was that I made this the day before. I didn't mix the wet with the dry until I was ready to cook, but the cherries had lost all their color, probably flavor too.
Actually the best part of my dinner was the rolls. For the first time I made the dough in my bread machine, than tied them into knots to make rolls. I guess because you can't get fresher then that everyone raved! The ham was great too. (best ham recipe, previous thread)

the sour cherries added quite an unique flavor, i bought a very thick hickory smoked bacon which probrably increased the fat, but oh well. i put half in the freezer for another time and reheated it in the oven. Tasted like i had just made it.
