View Full Version : Grilled Chicken with Peach, Black Olive, and Red Onion Relish

A friend had us over for dinner the other night and we made this recipe from The Thrill of the Grill. I could have eaten the whole bowl of relish all by myself! We used chicken breasts instead of thighs. According to the recipe, this is supposed to feed 8 as an appetizer, but that would be a huge appetizer!:eek:

Grilled Chicken Thighs with Peach, Black Olive, and Red Onion Relish

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 pound peaches -- Cut into 1" cubes
1/2 cup Kalamata olive -- pitted and cut in half
1 small red onion -- diced
1 roasted red pepper -- diced
4 Tablespoons olive oil
2 Tablespoons balsamic vinegar
1 clove garlic -- minced
1 Tablespoon fresh thyme -- chopped
salt and pepper
4 Tablespoons fresh lemon juice -- about 1 lemon
8 skinless chicken thighs

Combine peaches through thyme. Add salt and pepper to taste. Add juice just before serving.

Grill chicken thighs until done, serve with relish.

Hmmmm, That relish sounds interesting. Are the olives very strong in it? Or do you get a balance of all of the flavours? I love fruit relishes and salsas and I would be interested to try this one...

We all thought the olives were very good in the relish, and something none of us would have thought of otherwise. If you find you don't like them, you can just pick them out; there aren't very many, and they don't make everything else taste olive-y. :)

Thank you, That is what I was wondering. I love olives, but I know sometimes they can make everything taste like olives.
Will be adding this to the "To Try" list:)
