My favorite CL recipe is the Vidalia Onion Pizza. It is made with parmesan cheese, onions (of course) and swiss cheese. I make the crust in my bread machine. I am anxiously awaiting the arrival of vidalia season. Do you have a favorite recipe that showcases vidalia great flavor?

Baked Sweet Onions
4 medium sized sweet onions
12 plum tomatoes, seeded and chopped or 1 14.5 ounce can of Del Monte’s Fresh Cut Diced tomatoes, drained
2 Tablespoons chopped fresh basil
2 Tablespoons chopped fresh thyme
1 teaspoon salt
1 teaspoon freshly ground pepper
Optional: 2 Tablespoons finely chopped green pepper or 1 tablespoon of capers
¾ cup of balsamic vinegar (no kidding…3/4 cup…)
Cut a thin slice from bottom of each onion, forming a base for the onions to stand on. Remove onion centers, leaving ½ inch thick shells. Reserve centers for other uses.
Stir together the remaining ingredients; spoon evenly into onion shells. Place onions in a 9 inch baking dish, that has been sprayed with olive oil cooking spray.
Bake, covered, at 400 degrees for 50 minutes. Yield: 4 servings.

This is how me & alot of my friends cook them. Not an exact science!
1 onion per person
1 beef bullion (did I spell that right?) cube per onion
butter
aluminum foil
Skin the onion. Cut a small hole in the top of the onion. Put the bullion cube in the hole along with a small pat of butter. (I've done it without the butter too.)
Wrap tightly in aluminum foil.
Put on a baking sheet or in a casserole dish & bake on 300 or 350 for about 20 - 40 minutes. The slower you cook it - the better it will be. I've also placed them on a grill. Yum! They'll be brown & cooked on the inside when done. Very juicy too. Even of the outside seems a little burned (can happen grilling) the inside is still great.
You get all of the sweet onion flavor.

I have another one:
It's an appetizer. I never really use recipes - so this is a little off too.
8 oz low-fat mayo (if it's not low fat, it'll be greasy.)
8 oz parmeasan cheese shredded
1 large onion chopped
mix together & heat at 350 for 20-25 minutes or until brown & bubbly. Serve with triscuits or some other cracker.

I do the vidalia onion with bee boullion cube in the summer. It's great!
I have never used the butter but I put it in microwave in covered casserole for about 5 minutes. Great!

CL had a recipe during the summer (I think?) for rosemary-glazed roasted Vidalias.

Could you please post the recipe for vidalia onion pizza? I did a search but could not find... I have some beautiful Maui onions from Trader Joe's that would be excellent as well. Very sweet like Vidalias.
