I can't say I was blown away. I had a really hard time getting them to not burn even though I used Pam. They were a little dry and lacked that wonderful pancake taste. I think I will stick to the real deal!

I made these yesterday morning and thought that they were pretty good although I had to do the old add vinegar to make sour milk trick because I didn't have any buttermilk in the house.

The only problem that I had with them was in getting the lumps out. No problem w/burning because I used a non stick pan and Pam. I will definitely try them again.

I seem to recall these are pretty close to the ones I make all the time. However, every time I have used Pam or cooking spray where called for in a CL recipe, I have had problems with burning. When I make my pancakes I use vegetable/canola oil (whatever is available). Although it means they are somewhat more "fried" on the outside, the crunch and texture is much better.

I made these this weekend with *real* buttermilk and using PAM. I thought they were great! No Bisquicky after taste and they got very light and fluffy. I didn't have any problems with burning, but I did end up cooking them at a pretty low temperature. I'll be making these lots more!

I saw the article with the photo in this months CL. I was considering making them because they looked really good. So from reading everyones response should I bother?

I love pancakes, actually my favorite kind is "Carrot Pancakes". I know it sounds werid but it is yummy, the honey and cinammon make them wonderful http://www.cookinglight.com/bbs/smile.gif

Okay, I have to ask about the carrot pancakes. Is this a CL recipe? My toddler love the CL Sweet Potato Pancakes. Is it a similar recipe?

I saw these in the Dec. issue in the back and thought that they looked great, I love pancakes. I hope to try them and have better luck.

I was actually surpised to see these as a "best of" item warranting the last page (which is the page I look most forward to this year - I hope they continue this next year...). I will have to try them!

I love pancakes too, and I agree that these are much like the ones I always make; however, they do have less oil in them and they are tender. I remember reducing the oil in my regular recipe and they got a bit tougher. I will make them again.

I made these and thought they were really good. No problems whatsoever with lumps or burning (cooked on about 4 or low-med. on the stovetop). The problem I did have, however was the serving size...1 pancake???? who eats 1 pancake? Whatever!

Have to give these a thumbs up too! My toddler really enjoyed them too. I used the batter to make waffles instead of pancakes since hubby doesn't like pancakes. I made a double batch and froze the leftovers. I still like the Multigrain Pancakes (CL March 1997) best for waffles but this is a nice (easy!) change and a great way to use up leftover buttermilk. I'll have to try them as pancakes the next time!

Do you change anything about the pancake recipes when using them to make waffles? What are the waffles like (as in, are they more pancake-y)?

I used to have really bad problems with my waffle iron or similar old non-stick griddle sticking and I purchased a waffle iron spray (like pam, but this type didn't do the job) at a restaurant supply house and it has brought new life to my waffle iron that I was ready to throw out. I figured after 20 years that it was worn out but it looks like I have another 20 years now!

I don't change anything when using a pancake recipe for waffles. The waffles taste like normal waffles to me (sounds like a silly reply but it's true at least for me). I freeze the waffles in freezer bags and then reheat them in the toaster. My mom gave me a waffle iron this past fall, and I have been going waffle-crazy! http://www.cookinglight.com/bbs/biggrin.gif I like making my own healthier versions instead of going for the frozen store-bought ones.

We just got a waffle iron and have been Trying to go waffle crazy, but all the good light recipes seem to be for pancakes; I've been using recipes that call for a whole stick of butter per batch! Thanks to you, we no longer have to eat breakfast in shame... also, I've been having to dump out half the batter each time-- I didn't know I could freeze and reheat the extras like Eggos. Thank you so much for all the great tips!

No this was not a CL recipe but it you would like I can give you the recipe? I love these panckakes. I have never had Sweet Potato Pancakes but that sounds good also.

Carrot Pancakes

1 Cup flour
2 eggs, separated
1 Cup milk
1 Tbl honey
1/2 tsp salt
1 Cup shredded carrots (I shred the carrots with their skin on)
Cinnamon (I can't really give you a measurement on this because I kind of guess... I like a lot of cinnamon.)

In a large bowl combine flour, egg yolks, milk, honey, salt and cinnamon. Blend well. Stir in carrots. Beat egg whites until stiff; fold into batter.

Pour pancake batter into hot skillet. Cook 1 to 1 1/2 minutes on each side or until golden brown.

I just made these today and thought they were wonderful!! They were very tender, fluffy, moist, and delicious! I used real buttermilk and cooked them on a griddle at 375 degrees. I used butter flavor Pam and didn't have a problem with burning them. Also, I didn't stir until the batter was smooth; just until all the dry ingredients were incorporated. I even splurged and used real maple syrup.

I added some frozen blueberries to the last 1/2 of the batter. Yum! They were so good that I didn't need a lot of maple syrup on them. Tips on adding blueberries: don't add too many, don't make the pancake too big, and flip carefully.

Tips on pancakes in general: make sure your pan or griddle is hot, it's ready when a few drops of water dance on the hot surface, and turn the pancakes when the edges get dry and bubbles start forming on the surface.

I made the CL pancakes for dinner last night. We're in the middle of a winter storm and needed some more comfort food - we've been eating like this for 48 hours and oops, it's snowing again. At any rate my DH loved them and I had to make up another batch of batter because he ate the WHOLE THING!! I used butter flavored Pam and a teflon pan - did not have any problems except I didn't sit down to eat dinner til real late cuz was too busy flipping pancakes for my H.

I made these for dinner last night,too! We really like them. My two and nine year old ate them up!!! Anything they like is a hit with me.

i love pancakes, nothing beats a great batch on sunday morn with coffee and the paper. these were good, but a couple years ago there was a Groundhog Day recipe for pancakes and they are our old standby.

I absolutely loved these pancakes. I was skeptical based on the inital reviews but I really thought they were wonderful AND incredibly easy. My 3 1/2 year old and I make them at least twice a week! YUM.

I love these pancakes. Breakfast is my biggest meal of the day so I usually go with at least 2 pancakes -- maybe three on a Saturday. There's just something about having a "stack" of pancakes that makes them yummier.

I've also not had trouble with burning. I do cook them over a fairly low heat though. They take longer, but boy is it worth it.

I usually make about 9 pancakes. I wrap them in plastic wrap, stick em in the fridge and have them the next day too. I zap them in the microwave for about a minute. They're not as good as the first day, but still pretty tasty.

I just made these last weekend. I used canola oil on the griddle and it worked fine. They were super!! Now I have a quart of buttermilk to use up. Any ideas?
