The Tampa Supper club held it’s monthly meeting a week on June 18ago in St. Pete. The theme was Summer Salads and Chicken dishes. It was all very tasty and had a great time eating it all up!

Appetizers:
Chipotle Shrimp Cups- Fabulous! Yummy! Every last one gone! Easy and recommend these for parties. Pat made her own Chipotle salsa that added an extra bang to it.

Main Courses:
Couscous-Chickpea Salad with Ginger-Lime Dressing - It was tasty, but many of the favors weren’t present. We suggest you add more Lime to the dressing and more feta. If your not a lover of either, stick to the exact recipe and you’ll love it.

White Bean and Roasted Chicken salad- one of my personal favorites! Easy to make. We used a Mojo chicken rotisserie. It’s a do again. Great summer salad.

Parmesan Chicken and Rice- we stuck to the recipe, but we felt that it needed a little something more. It lost its taste at the tail end. So, we added more Parmesan. I may recommend adding a little more salt. Then it was yummy.

Curried Chicken Penne with fresh Mango Chutney. This is a thumbs up very taste. I love curry and it gave the pasta a very flavorful taste. Downside…time consuming.

Marinated Orange-Strawberry Salad- our group voted the salad would have been just as good with just the fruit. We don’t recommend iceberg lettuce used for this dish.

Chicken and Blue Cheese Slaw-Fabulous…5 Star followed the directions except used apple cider vinegar instead of rice vinegar and Mojo flavored chicken.

Southwestern Chicken Roll Ups-this was very tasty. Everyone enjoyed it. Receives high marks! Anne mentioned it was a little difficult to keep the filling in when she was making these.

Gazpacho Panzella-Tasty would recommend. I would add the cubes of bread as you serve each serving, therefore saving the salad from soggy bread. This way you could save any leftovers for the next day.

Tropical Fruit Salad- Southern Living. Very tangy. If you like mangos, this is the fruit salad for you. It was made with skim yogurt dressing. We recommend you use low fat or regular yogurt. Will make the consistency thicker. It was a little running, but it tasted fabulous.


Desserts:
Cinnamon Apple cake- MMMmmmm! This was yummy! Very tasty, nice crispy top and moist cake. We all loved it.
Homemade Raspberry/Strawberry Sorbet: I never had home made sorbet before. It wasn’t quite set to the consistency when we were ready for it, but lucky me, I got the leftovers left in my freezer. Sorry guys! It was really, really good after a day in the freezer.


Our next meeting will be July 17th for a barbeque!
