Does anyone know of a way to magically ripen kiwi very quickly? I want to make CL's Strawberry-Kiwi-Basil salad but the store's kiwi are a few days away from ripe. Can I ripen them by tomorrow? Thanks!

If they're anything like the peaches I bought the other day, you could leave them sealed in the plastic produce bag they came in and forget about them over night. Not a problem for one night, but the 2nd night it was not a pretty sight.

LOL Ewww. I'll put them in there -- can't hurt to try, eh? Meanwhile, you can make some peach margaritas. :D

Place in a brown paper bag with a banana. The banana emits a gas that speeds up ripening.
Plastic bags will produce mold, rot and fungus rather than hasten ripening as there is no way for moisture to be expelled.
The best way to ripen peaches, nectarines etc. is also to leave in a brown paper bag as the fruits emit a gas that helps each other ripen.

I didn't end up losing them all; and truthfully, it wasn't my intention to leave them in there to ripen...it were an accident. :D I then used them to make some of the most awesome amaretto/peach/pecan jam (supposed to be preserves, but I pulverized the fruit and nuts). Can't wait til it "mellows" so we can use it. I kept a small jar for the fridge to use now, but I know it's even better after a couple of weeks.
