I know that Terrytx gave a review of this one in a weekend review thread but it really deserves a thread all its own. This really was good! DH usually says "fine" to things but he said that this was "really good"! I agree. I halved the recipe for the 2 of us and since the recipe is for 8 we were able to have leftovers the next night. Both nights it was excellent. Terrytx was right when she said that the portions are generous.

It is somewhat time consuming chopping all that stuff up and I find having all those things on hand at the same time takes some planning. Luckily I won a "free bag giveaway" at my grocery store and got a bag of tortilla chips and a bottle of ranch dressing. That really helped since I never buy those things. Also, leftovers were very easy since all the chopping was done!

Terrytx also mentioned the different tastes and textures in this salad. DH and I thought the same thing. I loved the mango and the tortilla chips and the ranch dressing was wonderful with the chipotle chilies mixed in. I highly recommend this salad.

Thanks for the review. I will have to take another look at this one. I have an old CL recipe for a southwestern cobb salad that I make at least once a year. I might have to try this one now too. I love chipotles.

Ditto on everything Stacy said. I really loved the taste and textures of this salad. I especcially loved the flavor the mangos added. Even though it was time consuming to chop everything, it is going on the repeat list. Everybody in the house loved it and loved the fact they could pick and choose what went in their salad.

Made this last night since it is hotter than "youknowwhat" here! Ugh.
I had no mango, didn't toast the seasoning but other than that made it pretty much as written. I did halve it, plenty for 3 of us (friend was over) AND lunch for DH today. I didn't put everything in bowls, mixed together the corn, beans,onion,pepper stuff all together.

DH did say "you can make this again" and that it was quite a refreshing salad. We lean toward salads when its so uncomfortable in the summer.

Big 2 thumbs up here! :)
