I got red currants in my CSA share last night and made this (http://fooddownunder.com/cgi-bin/recipe.cgi?r=211662) cake.
I made 12 cupcakes and two mini-loaves from the single recipe - so I wonder if a single 10-inch pan might be too small. The cupcakes baked for about 23 minutes and the loaves for about 28.
The cake reminds me of a cranberry-orange bread, only juicier and lighter. The currants have quite large seeds though - which don't go well with the cakey texture. The recipe has excellent flavor and looks very pretty. But I think if I get more currants I might sub them for cranberries in a bread.
I'll post back later to let you know what the office thinks of it.:D
PS - Currants are a pain to clean!
