Irish Oatmeal Bread-Cooking Light, JANUARY 2004
Fantastic! I made the second loaf into Cinnamon Swirl Bread by spreading the dough with 1 T. butter and sprinkling with 1/3 cup brown sugar mixed with about 1/2 T. cinnamon and rolling it up and sealing it. Yum! I used instant SAF yeast (about 4 t.) instead of regular and skipped the egg glaze. I think I brushed the loaves with butter after removing them from the oven.

I made this so I could make those goat cheese/fig/basil sandwiches (which unfortunately were a big disappointment for me). I did this in my KA mixer. This bread was good and the dough was easy to work with but doubt I'll make it again any time soon. I would have preferred more cinnamon but wanted to follow the recipe. I did use 4 t. instant yeast instead of regular though. It's good for what it is but I prefer a sweeter/more cinnamony bread. I took a loaf to a friend who makes bread every week and he thought it was "awesome" though.

I made this dough into 8 long sandwich rolls to serve with the Crockpot French Dip meat. I used less herbs because I didn't want that flavor to be strong with the meat. And, again, I used instant yeast. They turned out good. I would make this recipe again.

I reviewed this on another thread but I don't want anyone to miss it. This is so good and so soft! I omitted the last T. of butter that you brush the loaf with and also I don't have semolina, but otherwise followed the recipe. I think I had to bake it a tad longer also. It rose beautifully in the pan and rose even further after being in the oven.
