HI! It turns out that I am cooking for another single friend and I am making the Grilled Tuna with Papaya Chutney. I thought rice or thin egg noodles would go nice but can't think of a veggie! Help. Any ideas?

Dessert, I am running home and making some biscotti.

Thanks.

How about a zucchini or yellow squash recipe? If you search on zucchini there are several that sound like they would go great. Especially the grilled vegetables with Balsamic.

I have been roasting broccoli and I am addicted. It is so easy and so tasty. Toss broccoli in a little olive oil, shake on some salt, pepper and garlic powder, place in a single layer on a cookie sheet and roast at 500 degrees for 10-15 minutes. The florets get crispy and brown. It tastes like fried broccoli

It is sooo good. My husband came home the other day and wondered what smelled so good. I told him it was roasted broccoli and he was very excited until I told him that I had eaten the whole head of broccoli and there was none left for him. I just couldn't stop eating it. Well, it was one way to get my veggies http://www.cookinglight.com/bbs/biggrin.gif.
