Well, I stopped at the store and bought all the fruit last night. I realized while I was at the store that I had no idea how to pick out starfruit, mangoes or papayas! I bought them anyway and went home to consult my Joy of Cooking book to learn how to pick them out and eat them. I am pretty sure the starfruit wasn't ripe. I tried it, but omitted it from the salad. The mango was awesome! I found the dressing to be a bit tart, too. The lime taste was really strong, but I brought some salad with me to work today and the flavor seems to have mellowed overnight somehow. It is good and it got me to try some different fruits. I was getting sick of the same old fruit every week from the supermarket- apples, pears, and bananas. I was in a horrible winter rut. And I love coconut! Overall, though, the taste of the salad seems to mostly depend on how good the fruit is. I'd definitely make it again, especially to bring to a get together as it's healthy, tasty and a little different.

I made this the other night too. I also had never bought star fruit before and had to look it up in Cook's Thesaurus. I don't think mine was quite ripe either--it was rather tart.

I agree with your assessment of the recipe. It was a little lime-y at first, but mellowed out the next dat. Overall, I probably will not make again as I don't think it was anything special.

Does anyone know how to tell if starfruit is ready to eat? I was wondering this, too. I loved this salad and think the dressing would be good on any fruit combo. It is pretty simple, but I probably would not have thought of it myself http://www.cookinglight.com/bbs/wink.gif
